Francesco Cambria started Cottanera in the 1960s. The name “Cottanera” comes from an antique building on the northwest side of Etna in Castiglione di Sicilia where there vineyards are located at 700 meters above sea level. This winery is unique because of its terroir; particularly the altitude and the exposure on Mount Etna. The unique mineral soil on Etna is a natural laboratory which could only come from a volcano with a history of thousands of years, like Etna. This altitude and exposure also allow large variations in temperature between night and day. The temperature can reach as low as 15 degrees Celsius at night. The 55 hectares of vineyards were all replanted in 1999 and are “cordone speronato” with 5,700 plants per hectare with an average of 3–4 branches and 1–2 buds per branch. All interventions in the vineyards are manual with no-drip irrigation. Labor is traditional with a mostly female team. The philosophy of Guglielmo and Enzo Cambria is to obtain a balance in the vineyard. The objective for reducing the vineyard’s quantity of grapes is to emphasize the complex, distinct aromas due to the special terroir. Vinifying the grapes separately, from each parcel of land helps the cantina achieve its goal of preserving the uniqueness of each vineyard.
